First, I´ve never written a blog before, Im not a writer, or a cook, or a mom, or a professional photographer, hell, english is not even my native language! but for some reason every time I read someones blog my head goes spinning on things I could write, most of the times dumb things like "why Britney Spears music is sooo damn explicit now?" or "why teenagers should stop reading twilight" or "10 Reasons why I should be Christina Aguilera´s stylist/manager/bff".
Other times I just basically wanna ramble about stuff thats happening in my life but that I don´t feel like talking to someone I love because I have a tendency of getting mad or over reacting when people try to give me a "solution" before I can even properly express the so called problem.
Other times I just wanna write about what I read in other blogs.
I know that as I write this I don´t have any "followers" or "readers" and I know most likely I never will, but I´d like to think I do. At least for today. Maybe I´ll never post an other entry. Maybe I will.
So with that said, lets get back to what inspired me to write today.
Today I decided to get back into the kitchen. I generally like cooking, I like trying new things and experimenting with new recipes and ingredients and stuff, but for the last couple of months I havent really been in the mood to cook, but I finally found my self some inspiration to go back in there! For the longest time Ive been wanting to try kale, but I havent found it on sale, its not very popular down here so... anyway I finally found an organic store that sales kale and I was soooo exited!! I decided to try one of the most popular recipes I´ve found so far, "the kale chips" So addictive bloggers around the world claim.
The recipe is vary basic and simple. Olive Oil, Sea salt and Kale. what could possibly go wrong with a 3 ingredient recipe right?... well... turns out a lot! for starters my kale doesnt look like the kale in the recipes Ive seen online, my leaves were way to big and not "curly" at all. The petiole was way to thick and I didnt have the common sense to remove it, I used way too much olive oil and salt... anyway, my "chips" were not "chippy" (Im not sure thats a word) and the kale was very bitter.
While doing my chips I thought "hmm why not make some banana bread, those bananas over there are more than ready, and if not used now they´ll go to waste".
Banana bread is easy, I have a wonderful recipe by "weight watchers", my sister has also a very good recipe, but I decided to be a bit adventurous so I went into my favorite website of all times "Punchfork.com" which led me to "http://www.skinnytaste.com/2011/07/low-fat-peanut-butter-banana-muffins.html". Its a Peanut butter banana cup cake recipe.
It looks delicious! I said to my self, so lets go ahead and do this.
First of all, the recipe is fantastic! but I had to make a few adjustments.
for starters, I dont have an electric mixer. So I did all the mixing by hand.
I also used 2 whole eggs, basically because I dont believe in the separation of the eggs or said in a different way, I DONT LIKE EGG WHITES...
Then I realized I also dont own a cup cake tin...I was a bit worried that by baking all the mix together the bread wouldnt "come up" but it did!! so now I have wonderful looking "Peanut butter banana bread"... as for the taste.. I think I should have use a little bit more sugar...
